Organic practices and in the process of certifying. Hand harvest off a mix of sites, hillside with granite soil and on the plain with clay and limestone, creating a balance between fresh, mineral lightness and concentrated density. A blend of whole bunch and de-stem, 15 day maceration and fermentation in stainless steel. Elevate in 50% stainless steel and 50% foudre that are up to 50 years old. Unfined, lightly filtered and minimal SO2.
