This whiskey is distilled from 100% New York grown grains and then barreled at a low proof. This traditional method creates a smooth product and allows less water to be added after aging to keep more flavor from the interaction between the whiskey and charred American Oak barrels. After aging, the whiskey is slowly brought down to bottling proof over several weeks, and then hand-bottled and labeled.
