This week we’re featuring 2017 Bear Flag Cabernet Sauvignon from Sonoma County, California!

 

Bear Flag is a deeply personal project for winemaker, Aaron Piotter, allowing him to represent Sonoma, his hometown, with perhaps the best known variety. While the region is most famous for its Pinot Noir, Zinfandel, and Chardonnay, Aaron recognized its potential to produce exceptional Cab Sauv and set out to make a Cabernet reflective of the terroir and his local roots.

The 2017 vintage season came early in Sonoma with an early budbreak and an unusually cool summer that allowed for more hang time needed for grapes to develop optimum flavor. The result is palate-filling roundness, richness, and smooth texture that makes this California Cab truly unique. The nose offers up spicy complex oak aromas of mint chocolate and clove complemented by sweeter palate notes of mocha, caramel, and cinnamon. The immense tannin structure is reflective of the rugged hillside vineyards where the grapes are grown.

Pair with braised beef short ribs, meatballs, roasted duck breast, grilled steak and veggies or semi-hard aged cheeses.
